What’s the Dish?
They say you are what you eat…
I can only imagine what that would make me after completely blowing 3 good weeks of healthy eating over the holiday weekend. There’s a reason why I am usually pretty strict about what I eat…because when I let up, I really go all out:
* In & Out Double-Double
* with fries (second day in a row of fries and I NEVER eat fries…)
* fried calamari
* fro-yo…twice
* rice, beans and fajitas
* chips & salsa
* pizza
…all in a 3-day period.
So now I have 3 days to get back on track so I can start my vacation in healthy mode.
Anyone who knows me will tell you that I pretty much only eat seafood. Having grown up in a home where my Mom doesn’t eat red meat, and my Dad and sister doesn’t eat seafood, we basically ate poultry – all. the. time. As a result, I am not big on eating chicken or turkey. And while I do love a good steak, I can’t eat red meat all the time. So, I basically eat seafood – shrimp, salmon, mahi mahi, halibut, scallops. And lots of it.
I’m always looking for new recipes to try, and recently found some great ones from Cooking Light. I like recipes from here because they list the nutritional value of each dish which really helps with calorie counting.
These are the 3 new dishes that I’ve made. I think they were delish – that being said, I am also the only one who can eat my own cooking…
1. Three-Chile-Dusted Shrimp with Quick Corn Relish
I didn’t have all the different kinds of chili powder, so I just one kind (which I guess would make it just “Chile Dusted Shrimp…”), and it turned out fine. Perfect summer dish!
2. Black Bean, Corn, and Shrimp Salad
I first made this one a few weeks ago and will be making it again tomorrow. Its similar to the one above, but different spices.
And finally, the one I made yesterday:
3. Shrimp and Orzo with Cherry Tomatoes and Romano Cheese
This one was goood, if I do say so myself!
I even took a photo of it:
Putting in a little planning and making a couple of dishes early in the week saves me a whole of time and money. I bring my own lunch to work, which saves me about $40/week. And, after a long day at work, I don’t have to worry about coming home to cook dinner – its already done.
