Over the past two weeks I:
+ I made lasagna for the first time ever using this recipe. It fit my gluten-free, dairy-free requirements perfectly and was delicious!
+ Ran the Rainbow Falls 5K race as pick-up miles in the middle of a long run.
+ Made portable oatmeal snacks! I wanted to make this recipe for a long time but was afraid the mason jars would explode in my oven. I finally took a chance and they didn't explode! This is a great snack to have on hand for days that I go into the office and have to pack a lunch bag.
+ Made two trips to Best Buy to find an HDMI solution that was compatible between my Mac Book Pro and TV so I could try GaiamTV. I plan on writing a full review of GaiamTV after my 10-day free trial ends.
+ Successfully achieved the two goals I set for January!
+ Tried this suggestion from Jess for an evening dessert. I blended one frozen banana, one c strawberries, 1 c water. The result was a frothy, creamy drink that I topped with sliced almonds. It was a strawberry dream!
+ Bought tickets for the new New Kids on the Block tour this summer!
+ Dined at Yucca de lac in Palo Alto for the first time. The Crab and Avocado Spring Rolls changed my life.
+ Then had my heart broken by the 49ers that evening.
+ Ate a lot of sweet potato tacos
+ And had breakfast for dinner eating newly delivered sugar-free Coconut Peanut Butter and gluten-free Macadamia Nut Pancake Mix from North Shore goodies.
